This bright salsa takes just minutes and is one of my favourite ways to use summer strawberries. It's delicious with tortilla chips or spooned over grilled fish or chicken.
Ingredients
1 ½ cups fresh strawberries, hulled and diced
¼ cup finely diced red onion
½ orange bell pepper, diced
½ jalapeรฑo, seeded and minced
2 Tbsp chopped fresh mint
Juice of 1 lime
1 tsp balsamic vinegar
1 tsp honey (or to taste)
Directions
Gently toss all ingredients together in a bowl. Let the salsa rest for 5 minutes so the flavours meld before serving. Best enjoyed the same day! Makes about 2 cups.

World Central Kitchen in Venezuela
Our thoughts are with everyone in Venezuela following the recent earthquakes. Javier, my husband and partner at A Taste for Travel, survived Guatemala’s 1976 earthquake and will never forget that devastation. World Central Kitchen is on the ground providing meals across affected communities. If you’re able, please consider supporting their relief efforts.
